This does need some explaining. It’s shredded, shop bought, filo (phyllo) pastry on a baking tray yesterday afternoon. It’s about to go in the oven for 30 minutes to be dried out. Dried out filo is used this way in a lot of Greek baking and I was making a Portokalopita or Greek Orange Pie.
Once dry the filo is crumbled into a custard mix (instead of flour) and then baked. It’s my favourite cake, possibly rivalled only by Lemonopita. The same pie made with lemons, instead of oranges. Here’s a picture taken this morning of the pie in its tray and then on a plate

I had NO idea you could bake with dried out filo. I hate working with filo – I never can get it to do what I want it to. Perhaps I should try drying it! That cake looks incredible. YUM!
Kirsten, if you ever want to try a different bake, try this. It’s lovely. We’re off to Crete next week so I’ll be testing the Orange Pie in the local bakeries there. I’ve no doubt we’ll end up eating our body weight in the stuff, we usually do if we can get our hands on it 🙂
