Baking – Welsh Cakes

My ingredient list for todays bake.

I’ve decided to start blogging some of my bakes as baking is something I really enjoy. If I can share a few recipes that’s good as well. It’s how I get a lot of my ideas.

I’ve wanted to try making these Welsh Cakes for some time as I’ve never tried them. I also find that my best selling food stock images tend to be traditional British bakes. Welsh Cakes fit nicely in to that category. So, when I saw a recipe for Welsh Cakes posted on Instagram, by someone I follow, I thought I’ll give them a go.

Today’s Welsh Cakes on the cooling rack.

The cakes themselves are really simple to make. It’s basically a scone mix although, unlike a scone, the cakes are pretty flat. The dough is rolled out thinner than a scone mix and then cut into 6-7cm circles. I used the same cutter that I use for my scones. The discs of dough are then cooked on a hot gridle or in a dry frying pan for about 3 mins on each side.

That’s the one bit I found a bit tricky because if your pan is too hot the cakes burn, if it’s not hot enough they won’t cook. Initially I singed a couple of my cakes but not that badly. By the time I cooked the last of them they were coming out ok. I think next time I’d use a slightly wetter dough as a few of them crumbled a little in the pan. All good experience.

Overall I was pleased with my Welsh Cakes. They taste great on their own or spread with butter. I’ll definitely make them again and it’s one of those bakes you could rustle up in less than an hour from start to finish.

I got the recipe from a lady called Pam Corbin. This is the link to the recipe on her Instagram page – Welsh Cakes recipe. Pam is also on WordPress here
